Mexican Beans And Rice

This is the new favourite in our house! It was created one night when we were feeling creative (read: had no food in the pantry!) and was such a success we have since made it over and over again.

This meal is cheap as chips and can be just simple beans and rice or turned into a Mexican feast with salad, salsa and guacamole!

This recipe serves 3-4

Mexican Rice and BeansINGREDIENTS


1 cup of brown (or white) rice or quinoa
1 onion
1 tsp of cumin seeds
1 tsp smoked paprika
1 cube/tsp of vegetable stock
2 cups of water


1 can of mixed beans (I use Pams Four Bean Mix)
1 can of black beans
1 tsp of smoked paprika
1 tsp of ground cumin
1 tsp oregano
1/4 tsp of cinnamon
Salt to taste


Handful of fresh coriander

Rinse rice or quinoa and set aside. Grab yourself a saucepan (with lid) and finely dice the onion and cook until brown. Add in the cumin seeds and smoked paprika and stir around for 30 seconds. Add your rice/quinoa and mix with onions and spices. Add water and stock, mix to combine. Bring water to a boil, place the lid on saucepan and turn down to a low/medium heat for approximately 25 minutes (brown rice may need a little longer, quinoa should be fine). I recommend setting the timer because if you are anything like me, something pretty will grab your attention and you’ll have no idea how long your rice/quinoa has been cooking!

If you have time, let the rice/quinoa sit for 30 minutes or so and then begin the beans (it just tastes better!). If you are short on time, when your rice has 10 minutes left to cook, grab a fry pan and heat on high. Add a little bit of olive oil (or oil of your choice) and throw the beans in. Add the smoked paprika, cumin, cinnamon and oregano along with a pinch or two of salt. Cook these on a med/high temperature for 10-15 minutes, stirring regularly but also letting them crisp up a little.

Serve as is or go to town and serve on a bed of finely shredded iceberg lettuce and top with homemade guacamole, salsa and coriander.
