Winter Greens: Kale, Spinach and Broccoli Soup
This delicious winter greens soup was created after being told I needed to eat more ‘leafy greens’ (don’t we all?!) As well as tasting amazing and being packed full of nutritious vegetables it is also incredibly quick and easy!
Soup is a great way to keep eating your greens in winter when the summer salad seems to be forgotten!
1 brown onion
2 celery stalks
3-4 fresh garlic pieces (or 2 teaspoons minced garlic)
knob of fresh ginger (or 1-2 teaspoons minced ginger)
1/2 bunch of kale (or half a salad bag)
1/2 bunch of spinach (or half a bag)
1 vegetable stock cube
4 cups of water
Salt and pepper to taste
Roughly cut up the vegetables. In a large sauce pan or pot brown the onions and then add in carrot and celery. After a few minutes add in the garlic and ginger and stir around for another two minutes or so. Next add the broccoli, spinach and kale and stir for 30 seconds. Add the stock and water and bring to boil. Turn down to a medium heat and let the vegetables cook for 20 minutes. Turn off the heat and let the soup cool for 10 minutes. Transfer the soup (including the liquid) to a blender and blend until it is the consistency you desire. If your blender is like mine and heats the soup for you then serve straight away, otherwise transfer back to the pot and warm up on a low heat. Serve with toast, spread with garlic, olive oil and salt!
