Crunchy Buckwheat Trail Mix

Buckwheat has a long list of heath benefits, along with being gluten free it also helps to balance blood sugars, is full of nutritious vitamins and minerals and is low GI.

This Crunchy Buckwheat Trail Mix is one of my most loved ways to create: just throw together what ever you can find in the cupboards (make sure to search in the dark corners of the pantry!) and wah-lah! you have a meal.

Crunchy Buckwheat Trail MixINGREDIENTS

1 cup of raw, hulled Buckwheat

The rest is really up to you…in the pic to the right I’ve added:

Coconut threads
Sliced almonds
Cashews
Walnut and pecan pieces
Chia seeds
Pumpkin seeds
Sunflower Seeds
Currants
Goji berries
Chopped dates
Cacao powder
Maca powder
Vanilla extract

LETS GO!

Preheat the oven to bake/fanbake at approximately 150ºC . Line an oven tray with baking paper if desired. In a bowl mix the buckwheat, nuts and seeds and then spread evenly on the tray, place in the oven for 15 minutes. Check after 15 minutes and leave to roast for a little longer if desired, set a timer for 5 minute slots because if you’re anything like me I wander off and get distracted by almost anything! Once you are satisfied remove from the oven and pout into a bowl and mix in the dried fruit and cacao. I toasted a portion of the coconut separately on the stove top and added a few drops of vanilla extract for a little sweetness.  Snack while it is still warm and keep the rest stored in a glass jar or container.
