Coconut Yoghurt (Dairy Free with Probiotics)

I’ve joined the coconut yoghurt craze! It is such an easy and great diary free option, and even better it’s homemade so you know what it’s made off!

In the below recipe we add in some probiotics for a healthy happy gut. I use probiotics everyday and they have done wonders for my gut health, after all it is said that healing must begin in the stomach first. Just a warning on the coconut cream…it seems that different brands react differently when it comes to separation. If the brand you use usually tends to have the cream up the top and the liquid down the bottom I would remove the liquid (add it to a smoothie?!) and use the cream part.

Coconut YoghurtINGREDIENTS

1 can of full fat coconut cream
3 probiotic capsules
2 tbsp of your chosen sweetener: honey, maple or agave syrup (optional)
1tsp of vanilla essence (optional)
A glass jar

LETS GO!

First of all, ensure the jar is clean! You can if you wish sterilise the jar with boiling water for 10 minutes. Heat your coconut cream on a low heat until it is warm to touch – do not boil. Pour the warmed cream into the glass jar and add the powder from the probiotic capsules , sweetener and vanilla essence if desired. Stir well and place the lid on the jar. Store by a sunny window, warm place (like a hot water cupboard) or even in the oven with light on for 12-24 hours. Once ready place in the fridge and serve once chilled. If you can wait leave in the fridge for 2-3 days and then enjoy with some homemade muesli or your favourite dessert.

Easy peasy huh! My first batch didn’t work out the way I hoped…I forgot about the separation issue but the second attempt was delicious!
