Healthy Banana Bread

This delicious banana bread recipe tastes and smells amazing! Our banana bread is definitely something you serve up while it is still warm with your favourite hot drink.

There are lot’s of different options with this banana bread recipe. We make it vegan styles but you can use honey as your sweetener or eggs instead of the chia seed mix, it all comes out as mouth watering banana bread at the end of the day!

INGREDIENTS

2-3 bananas (mashed)
100g walnuts
100g coconut oil
2 tbsp of ground chia seeds mixed with 6 tbsp water (or 2 eggs)
2 cups of self raising flour (I use gluten free)
125ml rice malt syrup (or honey)
1/2 tsp  ground cinnamon
2 tsp vanilla essence
1/2 tsp of xanthan gum

LETS GO!

Firstly preheat the oven on fanbake to 180c and line a loaf tin with cooking paper.   Mash bananas and roughly chop walnuts into small pieces.  Combine mashed bananas, coconut oil, eggs (or egg substitute), flour, cinnamon, vanilla and xanthan gum mixing until ingredients form a batter.  Add in walnuts and mix to combine.  Pour into your loaf in and place in the oven for 40-45 minutes or until cooked through.  Once cooked allow to cool and remove from loaf tin.  Serve while still warm (YUM!) and store the rest in a cake tin or container.
